Egg and Vegetable Hash
This is a fabulously healthy recipe with an array of nutrients and very filling but not hugely calorific meal. Enjoy!

   

4 Eggs                      

85g Frozen/Fresh Kale
1 Onion, finely chopped
½ Sweet potato, grated
Optional: Feta Cheese, Chilli Flakes

Serves 2

Spray a medium frying pan with coconut oil and heat.
Add the kale, 1 finely chopped onion and ½ a medium sweet potato grated in the pan.Season well and stir fry for 5 minutes. Make four grooves in the mixture with a spatula and crack an egg into each groove. Turn heat down to medium.Cover the pan for five minutes until the eggs are 'poached' within the vegetables.Salt the eggs and sprinkle with feta cheese before serving. I like to add chilli flakes to liven it up! Add your favourite seasonings to it.
